‘Drought Kitchen’ opens in Woodstock

In response to Cape Town’s water crisis, award-winning chef and owner of the famous Test Kitchen will be opening a pop-up ‘Drought Kitchen’ in the restaurant. The restaurant will demonstrate water-wise cooking in an attempt to take ‘drastic action to keep ahead of the crisis’.

A sumptuous six-course menu will feature dishes such as a 12-hour hot-smoked trout served with watercress and yoghurt snow; sweetbreads with asparagus, peas, morels and porcini hollandaise; tuna niçoise salad; pig-head salad and pork pie; springbok, beetroot, bone marrow and hazelnut curd; and peaches and lavender for dessert. All of the dishes require minimal water to be prepared.


The variety of ways in which The Test Kitchen will be saving water include saving grey water from air-conditioning units, using ice bucket water to mop the floors, disconnecting hoses in the scullery, fitting diffusers on taps, replacing all their linen tablecloths and napkins with paper ones, and most innovative of all, the plates will be replaced with a “hand-crafted disposable dining plate akin to an “empty picture frame”, that will have a piece of interchangeable card that each course will be plated on, effectively making every dish a picture.”


According to Chef Luke: “Restaurants are reliant on water for not only their laundry but also they consume a great deal of water on dishwashing. By taking away 90% of the chinaware we have effectively eliminated 90% of our water usage from the dishwasher and, along with only operating the laundry for basic essentials, we are hopeful that this will make a difference”.
